Why You Crave Ultra-Processed Foods After Drinking Alcohol

A drink in the evening can do more than loosen conversation. It may also nudge the brain and body towards salty, savoury, ultra-processed foods, according to recent research from the University of Sydney.

The finding will feel familiar to many people. After wine, beer, spirits, or cocktails, chips, pizza, fries, noodles, burgers, crisps, or takeaway food can suddenly seem far more tempting than usual.

The research, published in Obesity Reviews, suggests this is not simply a matter of weak willpower. Scientists found that alcohol consumption may intensify a biological appetite for savoury, umami-rich foods.

That drive may once have helped humans seek protein. In today’s food environment, however, it can steer people towards ultra-processed products that taste meaty, salty, or deeply savoury, yet often contain little meaningful protein.

That distinction matters. Savoury flavour is not the same as nutrition.

Researchers observed that people consumed more savoury foods on days when they drank alcohol than on days when they did not. Each standard drink was linked with higher savoury food intake. Sweet food intake, by contrast, appeared to fall. The pattern points towards a specific shift in appetite, not just a general rise in hunger.

The proposed mechanism centres on a hormone called fibroblast growth factor 21, known as FGF21. This hormone is produced mainly by the liver. It responds to nutritional stress, including alcohol exposure.

Previous research has linked FGF21 to changes in appetite, alcohol preference, sweet taste, and protein-seeking behaviour. The University of Sydney researchers suggest that alcohol may raise FGF21 levels in ways that amplify cravings for salty, savoury, protein-like foods.

In a simpler food landscape, that might have been useful. A craving for umami or savoury flavours could have pushed people towards meat, fish, eggs, legumes, or other protein-rich foods. The body sensed a need. The food supply answered with nutrients.

Modern food systems complicate that signal. Many ultra-processed foods are engineered to taste savoury without providing much protein or fibre. Artificial or concentrated flavourings can mimic the sensory profile of protein-rich food. The mouth receives a powerful umami message. The body may not receive the expected nutrition.

Researchers described this as a kind of “protein decoy” effect. The food tastes as though it should satisfy a protein appetite. It may not. So the person keeps eating.

That idea fits with a broader nutritional theory sometimes called the protein leverage hypothesis. In basic terms, when a diet is diluted with foods that are high in fat or refined carbohydrate but low in protein, people may eat more total calories to reach their protein target. Alcohol could sharpen that protein appetite. Ultra-processed savoury foods could then misdirect it.

The result can be a double hit. The person takes in extra alcohol calories plus extra food calories, often from foods high in salt, refined starch, saturated fat, added fats, flavour enhancers, and low-quality ingredients. A single night will not determine someone’s health. Repeated patterns can.

This is one reason the study is drawing attention. The findings sit within a larger public health conversation about alcohol, diet quality, obesity, metabolic health, cardiovascular disease, and cancer risk.

Evidence has increasingly challenged the old idea that moderate drinking is harmless, or that certain alcoholic drinks offer reliable health benefits. Health authorities in many countries now stress that lower alcohol intake generally means lower health risk.

Still, public health advice must meet real life. Many adults continue to drink. Some drink rarely. Some drink socially. Some drink regularly. For those who choose to consume alcohol, understanding the food environment around drinking may be practical and protective.

The key message is not that everyone must fear a slice of pizza after a night out. It is that alcohol can create a predictable appetite pattern. Once people know the pattern, they can plan around it.

Experts note that hormones are only part of the story. Alcohol also lowers inhibition. A person who would usually cook, choose a balanced meal, or stop after one portion may be more likely to order fast food after drinking. Decision-making changes. Impulses become louder. The reward value of highly flavoured food rises.

Timing matters too. Drinking often happens in the evening or late at night, when people are tired, hungry, less organised, and surrounded by convenient food options. Kitchens may be closed. Fast-food outlets may be open. Friends may be ordering fries. Delivery apps may be only one tap away.

Social cues are powerful. If a group heads for takeaway after drinks, the easiest choice is to join them. If the table orders salty snacks with beer, those snacks become part of the drinking ritual. Over time, the pairing can become automatic.

Biology also plays a role beyond FGF21. Alcohol can affect blood sugar, sleep quality, hydration, appetite hormones, and reward pathways in the brain. Some people feel hungry after drinking. Others wake the next day craving salty food, partly because dehydration and poor sleep can increase the appeal of dense, comforting meals.

This helps explain why cravings after drinking often feel physical rather than merely emotional. The body is not imagining the pull. But the available food choices can determine whether that craving leads to nourishment or excess.

Dietary environment is central. A craving for savoury protein is less concerning if the available options are eggs, grilled fish, lentils, chicken, tofu, beans, yoghurt, cottage cheese, nuts, or wholegrain toast. These foods can provide protein, fibre, minerals, healthy fats, or other nutrients.

The same craving becomes more problematic when the available options are crisps, fries, instant noodles, processed meats, greasy takeaway meals, cheese-flavoured snacks, or frozen pizzas. These foods can be intensely satisfying in the moment. They are also commonly high in salt, energy, refined carbohydrates, added fats, or additives, while being low in fibre and micronutrients.

Food manufacturers understand savoury appetite very well. Ultra-processed snacks are often designed for maximum palatability. Texture, aroma, salt, fat, starch, seasoning, crunch, softness, and aftertaste can be adjusted with precision. The goal is not only flavour. It is repeat eating.

That is why a person may open a bag of crisps intending to eat a small amount, then finish the bag. It is also why alcohol and ultra-processed savoury foods make such a potent pairing. Alcohol can lower restraint. The food is designed to be difficult to stop eating. The body may still be searching for protein.

The research does not mean savoury foods are unhealthy by definition. Savoury taste can come from nutrient-rich foods. Fish, mushrooms, tomatoes, seaweed, fermented foods, beans, lentils, eggs, poultry, lean meat, yoghurt, nuts, seeds, and cheese can all provide satisfying savoury flavours. The question is what else comes with the flavour.

A bowl of lentil soup, for example, delivers savouriness with fibre and protein. Air-popped popcorn with light seasoning offers crunch with fewer calories than many fried snacks. Wholegrain toast with avocado and cottage cheese can satisfy salt and creaminess while adding nutrients. Tuna, boiled eggs, vegetables, edamame, Greek yoghurt dips, roasted chickpeas, tofu, or bean-based dishes can also meet the appetite more directly.

Planning can help. Eating a balanced meal before drinking may reduce late-night hunger. Including protein earlier in the day may blunt the sense of needing to “catch up” later. Keeping better options at home can make the easiest choice a healthier one. People who know they crave salty food after alcohol can prepare for that reality rather than relying on willpower at midnight.

Simple swaps can make a difference. Choose grilled skewers instead of deep-fried sides. Order a meal with beans, fish, chicken, tofu, or eggs rather than only chips. Pair drinks with vegetable-based dips, nuts in modest portions, seafood, soup, or wholegrain snacks. If ordering takeaway, add a protein-rich dish and vegetables, not only fries or breaded items.

Hydration matters. Alternating alcoholic drinks with water may help reduce total alcohol intake and ease next-day thirst. Eating slowly can help too. Alcohol can speed up impulsive eating, so pausing before ordering or serving more food may interrupt the automatic loop.

Portion size is another practical lever. It may be unrealistic to tell people never to eat celebratory or comfort food after drinking. A more useful approach is to reduce frequency, reduce portion size, and improve the surrounding pattern. One slice of pizza with salad and water is different from several slices, fries, crisps, and more drinks.

Public health experts also emphasise that people should not use food strategies to make heavy drinking seem safe. Better snacks do not cancel alcohol-related risks. Heavy drinking raises the risk of injuries, liver disease, certain cancers, high blood pressure, mental health problems, sleep disturbance, and dependency. People who find it difficult to cut down, or who regularly feel out of control around alcohol or food after drinking, should seek professional support.

The study’s strength lies in highlighting a plausible biological explanation for a common behaviour. It does not reduce eating to hormones alone. It places hormones inside the real world, where delivery apps, engineered snacks, social habits, stress, fatigue, and cheap ultra-processed foods shape decisions.

That framing is important. Blame is rarely helpful. Awareness is.

For clinicians, dietitians, and public health professionals, the findings offer another reason to discuss alcohol and food together rather than separately. Drinking habits influence diet quality. Diet environment influences the consequences of drinking. Both affect long-term health.

For consumers, the takeaway is refreshingly practical. That late-night craving for something salty may have a biological push behind it. But biology is not destiny. The food within reach still matters. So does the drink in the glass, the company at the table, the hour of the night, and the plan made before the first sip.
